Grapefruit Cucumber Basil Cooler

Cucumber and grapefruit are fine enough together on their own. But add in the boldness of fresh basil leaves, and you have a unique and delicious flavor combo, especially in cocktail form. You know what they say: Two's a company, three's a party.


In terms of this delicious and refreshing Grapefruit Cucumber Basil cooler, three is actually a party in your mouth. Grapefruit naturally has a tart taste, which is complemented nicely by the crisp, cool cucumber. Add a kick of bold basil, and it's definitely one of my favorite cocktail recipes to enjoy for the spring or summer.

The grapefruit juice also gives this drink a lovely light pink color, so it's perfect for outdoor bridal showers, spring cocktail parties or anytime you are hosting a girls' night in. Garnish each glass with a cucumber slice and a big basil leaf for an extra chic touch. Of course, striped straws also dress up cocktail glasses nicely, which is why I love these gold chevron paper straws.

 

 

To keep this drink low-calorie and simple, I used only a few basic, fresh ingredients. I started with fresh-squeezed grapefruit juice, water (use club soda if you want it fizzy), organic basil and Skinnygirl Cucumber Vodka. The Skinnygirl vodka adds a crisp flavor without adding any unwanted sugar, calories or guilt. It also pairs really well with the fresh juice and club soda, and makes for a light, low-calorie drink.

 

 

Since the grapefruit is pretty tart, you can also add some sweetener, such as stevia or agave nectar to balance out the potent grapefruit taste. 

Ingredients
  • 2 jiggers (3 ounces) Skinnygirl Cucumber Vodka 
  • 6 ounces fresh-squeezed grapefruit juice
  • 2 ounces filtered water, or club soda
  • Sweetener of your choice (optional)
  • Handful of large, fresh basil leaves
  • Cucumber slice for garnish (optional)
Directions

In a highball glass or mason jar, muddle 3-4 basil leaves. Add handful of ice cubes.

In a cocktail shaker, add grapefruit juice, vodka. water and sweetener. Tear 1-2 basil leaves in half, and toss in the shaker. Shake, and pour into prepared glass (over ice).

Hint: If you are making with club soda, stir the cocktail with a cocktail spoon rather than shaking.

Garnish with straw, cucumber slice and basil leaf.

Makes: 1 (fairly large) cocktail
