Green Bean Casserole Recipe

The holidays can be a stressful time, but that doesn't mean you have to use the same old stale recipes over and over again. Clinton Kelly, co-host of the TV shows "The Chew" and "What Not To Wear" suggests updating your boring, old recipes into fresh new homemade dishes your family will love. 


Kelly suggests that in order to make an old recipe even more delicious, think about how grandma would have made it. Ditch the can of french onions and mushroom soup and put a homemade twist on your favorite holiday recipes. 

Kelly's green bean casserole is one that is full of flavor, but not necessarily all the effort. With a special addition of caramelized onions and cheese, this casserole is sure to be a hit at your holiday gathering this year. 

Ingredients

1 1/2 pounds of fresh green beans, ends trimmed and cut roughly into 1 inch pieces.

1 large yellow onion, cut in half and sliced

1 minced clove of garlic

1/2 cup of white wine

3 tbsp butter, divided

2 tbsp all purpose flour

1 3/4 cups of whole milk

8 ounces Sargento Chef Blends Shredded 4 State Cheddar Cheese

1 tbsp dijon

3 dashes of hot sauce

1 sheet frozen pastry puff, thawed

1 egg, beaten

Kosher salt

Freshly cracked pepper

Directions

Preheat your oven to 400 degrees.

Melt 1 tablespoon of butter in a large saute pan over medium heat. Add onions and salt then cook until brown and caramelized. 

Add garlic to the pan and cook until soft. Deglaze the pan with white wine, and then reduce by half.

Next, blanch green beans in salted boiling water. Plunge green beanms into an ice bath. Drain them and then toss the greens into a pan with the onion mixture until they are full coated in the wine reduction. Transfer to a 9x13 casserole dish and set aside.

For the sauce, melt the remaining 2 tablespoons of butter in a saucepan and add flour. Cook over medium heat while wisking the mixture until golden brown. Slowly mix in the milk and cook until thick.

Add mustard, cheddar and 2 tablespoons of parmesan to the mix. Stir until melted then season with salt, fresh pepper and hot sauce.

Pour cheese mixture over the green beans in the casserole dish. Press down with a spoon to create an even layer.

On a floured surface, roll out the puff pastry to the size of your casserole dish. Cover the casserole dish with your mixture in it with the floured sheet of puff pastry. Make sure to fold the edges over the side.

Brush egg wash over the puff pastry. Sprinkle with a little bit of parmesean cheese and black pepper. Place dish on a baking sheet and bake for 20-25 minutes or until golden brown.
