Halloween Pumpkin Quesadillas for Kids

Though they're a favorite any day of the week, the kids will enjoy eating the quesadillas even more than usual!


I have yet to meet a kid, let alone an adult, who doesn’t like quesadillas. It’s a simple snack of flour tortillas and cheese that truly appeals to everyone. To make this snack a special Halloween recipe for a kids party, all you need is a pumpkin cookie cutter. Use the cookie cutter to cut out pumpkin shapes from the cooked quesadillas, and then take them to the next level by having the kids draw Jack O’ Lantern faces on the pumpkins.

Ingredients
  • 4 jumbo flour tortillas
  • 1 cup shredded Mexican cheese
  • Salt and pepper, to taste
  • Sriracha, or any type of red, thick sauce/salsa
  • Small pumpkin cookie cutter
Directions

Place 1 tortilla on a large skillet over medium heat. Place 1/2 cup of the shredded cheese on the entire surface of the tortilla. Add salt and pepper. Top with another tortilla. Cook until both sides of the quesadilla are lightly browned.

Place the cooked quesadilla on a cutting board. Using your pumpkin cookie cutter, cut out pumpkins from the quesadilla. You should be able to get about 7 small pumpkins from one quesadilla. Repeat with the remaining 2 tortillas and cheese.

Once finished cutting out all your pumpkins, use the sriracha or hot sauce to create the jack ‘o lantern face. To create the face, carefully draw two triangle eyes and then a mouth. Your mouth can be an open smile, a crooked smile, or anything you want. Be creative! Serve and enjoy!

These are best served right after cooking. You can make them ahead of time, but you will have to reheat them in the oven until warm and crispy.
