Healthier Buffalo Chicken Wraps

Whenever my girls and I get together for lunch, one of us is bound to order a Buffalo chicken wrap. We're not the salad-type, nor do we make the healthiest food choices - Buffalo chicken wraps are simply yummy. Going out though, we all know, it's tough to control the calorie intake as you simply don't control what ingredients go into your dish.


 

As April turns into May and May into June, my girls and I are committed to curbing our poor eating habits so we're ready to hit the beach - but we're not ready to give up great tasting food. Luckily, we don't have to!

This recipe was inspired by my aunt who makes one killer Buffalo chicken dip at all our parties. It packs quite a bit of flavor despite requiring only a few ingredients, takes virtually no effort to prepare and will fill you up without making you feel guilty.

 

 

Ingredients
  • 6 chicken breasts - the thicker, the better
  • 1/2 medium onion, chopped (I used red)
  • 1 1/2 cups low-sodium chicken broth
  • 1 cup water (add a bit more to cover the chicken if you have to)
  • 1 celery stalk, cut in three
  • 1 cup Frank's Red Hot + 1 tablespoon
  • 2 tablespoons lime juice
Directions

Clean your chicken, rinse and pat dry. Drop them into a crock pot with the onions, pour in your chicken broth, water, lime juice and 1 tablespoon of the hot sauce. Give a good stir, add in the celery.

Make sure your chicken is completely submerged in the mixture, then cover and cook on low for 8 hours.

After 8 hours, gently remove the chicken from the crock pot and place on a large wooden cutting board. Reserve 1 cup of the broth, but then pour out the rest of the mixture.

Using 2 forks, shred your chicken. When shredded, return to the crock pot with the reserved broth. Add in the remaining cup of hot sauce. Stir well.

Return the lid to the crock pot and turn it on high for another 1/2 hr.

Once cooked, place mixture into cleaned lettuce leaves, top with shredded carrot, celery and dressing if you desire! (We did 1 tablespoon each of Ranch over three lettuce leaves.)

 

Serves:

This recipe makes a LOT of chicken which is why it's so great for parties. You'll definitely get enough to feed at least 8 hungry adults out of it!
