Healthy Banana Cherry Breakfast Muffins

Sometimes the only inspiration you need to whip up some fresh baked goods is an overripe banana.

I really hate to throw out any food, so when I noticed I had an overripe banana in our home fruit bowl, I decided to get creative and make some yummy (healthy!) muffins with juicy cherries and crunchy walnuts to have for breakfast this week.

Banana Cherry and Walnut Muffins

Feel free to throw in whatever ‘add ins’ are your favorite or that you have on hand. I had some delicious frozen cherries in my freezer I wanted to use and they were a hit! They go so well with that great banana taste.

Bananas Overripe to add to Muffins

  • 2 cups Bisquick
  • 1/3 cup sugar
  • 2/3 cup milk ( I used Almond Milk)
  • 2 tablespoons melted butter (or greek yogurt)
  • 1 egg
  • 3/4 cup organic frozen dark cherries
  • 1 overripe banana
  • 3/4 cup loosely chopped walnuts

Heat oven to 400 degrees. Grease muffin pan with non-stick cooking spray.

Mash banana into bowl. Stir all other ingredients except cherries and walnuts in medium bowl, just until moistened. Fold in cherries and walnuts last.

Divide batter evenly in 9 large, or 12 small muffin cups.

Bake 13 to 18 minutes or until golden brown. Cool slightly and remove from pan to wire rack.
