Healthy Sweet Potato Mash

Sweet Potatoes are a must on my Thanksgiving table. They are flavorful, healthy, and really easy to make. The ultimate calorie killer when cooking sweet potatoes is the addition of butter and cream to them.


Both of those ingredients have lots of fat that make sweet potatoes lose their healthiness. 

To make my version of healthy sweet potatoes, all I do is add some coconut milk to the mashed sweet potatoes. The coconut milk is a healthy option that makes the sweet potatoes creamy without the added cream. By also adding a dash of cinnamon, you are bringing out the natural sweetness of the sweet potatoes without needing to add any sugar.

Don’t think that just because this recipe doesn’t have any extra butter, cream, or sugar, that’s it not going to taste good. It truly is delicious and has tons of flavors. Trust me!

Ingredients
  • 2 large Sweet Potatoes, Peeled and Largely Diced
  • 1/2 cup Coconut Milk(From a Can)
  • Pinch Cinnamon
  • Salt and Pepper, to Taste
  • 1/2 cup Pecans, Chopped, For Serving
Directions

Place the diced sweet potatoes in a large pot. Fill the pot with water until it just covers up the sweet potatoes. Cover the pot and then place it on the stove over medium heat. Allow the water to boil and for the sweet potatoes to soften, about 10 minutes.

Once the sweet potatoes have completely softened, remove the pot from the heat and pour the sweet potatoes through a strainer.

Place the sweet potatoes back into the pot over low heat.

Add the coconut milk, cinnamon, and salt and pepper; stir to combine. Transfer the sweet potatoes to a serving dish.

Sprinkle the pecans on top of the sweet potatoes.

Note: This sweet potato mash lasts up to 4 days in a sealed container. To re-heat, place the sweet potatoes in a microwavable dish and microwave for 90 seconds.
