As temperatures rise and summer’s bounty follows suit, this refreshing appetizer is sure to hit the spot on even the balmiest of nights.
3 pounds heirloom tomatoes, diced
3 garlic cloves, minced
8-10 basil leaves, chiffonade
3 tablespoons extra virgin olive oil, plus more for toast
1 tablespoon balsamic vinegar
Salt and pepper, to taste
In a small bowl combine the tomatoes, garlic, olive oil, and balsamic vinegar; season the mixture with salt and pepper to taste. Cover the bowl and allow it to sit while preparing your toasts.
Preheat the oven to 375°F and cut your baguette into 1/2-inch thick rounds and arrange on a non-stick baking sheet. Drizzle the remaining olive oil over the tops of the bread slices and bake for 5 minutes or until golden brown.
Serve your toasts warm with heaping spoonfuls of bruschetta and enjoy!
