Homemade Ice Cream Sandwiches

Whether it's the middle of summer or the middle of winter, nothing should stop you from enjoying a fluffy sweet dessert inspired by the classic ice cream sandwich. Light and airy pound cake replaces heartier cookies in this homemade twist on the ice cream sandwich recipe.

Though you can certainly make your own pound cake, we use a store-brought loaf for these desserts. Sandwiched between two slices is rich creamy vanilla ice cream, which can also be brought in the store, making this dessert recipe one of the simplest kitchen crafts that even kids can help make.

For added color and flavor, we rolled our sandwiches in sugar sprinkles. And since these were homemade Valentine's Day treats in our house, we also cut the pound cake into heart shapes, but you can turn your sandwiches into any shape you'd like!


1 loaf of ready-made pound cake

3 cups of vanilla ice cream

1 cup of sugar sprinkles


Remove the ice cream from the freezer and allow it to soften slightly - you don't want it to be runny, just soft enough to spread.

Once soft enough to spread, remove the pound cake from the package and slice into 1/4 slices. At this point, if you want to shape your pound cake, use the cookie cutter to create heart shaped pound cakes that will act as the sandwich base and top. 

Place a scoop of ice cream on a heart shaped pound cake slice and then gently push the top slice atop to create the sandwich. Use a spatula to remove any excess ice cream that might spill over and then sprinkle with sugar sprinkles before wrapping in plastic wrap and placing in the freezer to set for 1-2 hours. 


Makes 10 sandwiches, depending on the size of your loaf
