Honey-Ginger Glazed Beets

Often called Nature’s candy, beets offer a delicate sweetness that few confectioneries can come close to matching. This simple side dish combines the earthy sweetness of beets with freshly grated ginger for a subtle, yet satisfying, accompaniment to your favorite summer meal.

A hint of honey and splash of balsamic vinegar add richness and depth to this effortless dish without complicating the simplicity of this summer classic.


5 medium beets, peeled and quartered

2 tablespoons Earth Balance or butter

1/3 cup balsamic vinegar (I used a fig balsamic for extra oomph)

1 tablespoon fresh grated ginger

1 tablespoon raw local honey


Preheat oven to 400°F In a cake pan or other deep  oven-save pan add beet wedges in a single layer. Lightly splash pan and beets with a small amount of cold water and cover completely with aluminum foil. Roast beets in oven for 15 minutes or until dark but not blackened.

Meanwhile, sauté ginger in Earth Balance or butter until fragrant; stir in honey and vinegar, and continue to heat until glaze begins to thicken slightly.

Once roasted, remove beets from oven and allow to cool slightly. While still warm peel the darkened layer off beets and transfer to a small bowl. Pour glaze over beets and using a spatula toss until well coated. Serve warm or refrigerate for up to 2 weeks in an airtight container.

Beets can be enjoyed both warm or chilled.
