Lemony Sweet Sugar Cookies with Pretty Pink Sprinkles

Who doesn't love plain old sugar cookies? They're a classic dessert treat that can be decorated and dressed up any way you'd like. For a tangy citrusy-sweet version, I added some fresh lemon juice and lemon zest to the batter to create these Lemon Sugar Cookies. 


For a fun pop of color, I topped these tasty sugar cookies with some pink sprinkles. These delicious lemony cookies complemented my Homemade Limoncello very nicely, and were the perfect addition to my Limoncello Cocktail Party. 

 

 

 

Whether you serve these with a limoncello cocktail or not, they will definitely be a crowd pleaser at your next summer bash. Chevron napkins optional (but highly recommended). 

 

 

Ingredients
  • 1 1/3 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 large egg
  • 1/4 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • Pink sprinkles (or any sprinkles of your choice)
Directions

Preheat oven to 350 degrees. Line a baking sheet with parchment paper, and set aside. 

In a large bowl, combine the dry ingredients: flour, baking powder, baking soda and salt. Set aside.

In a separate bowl, add lemon zest, egg, vanilla and lemon juice. Beat with a kitchen mixer at medium speed until well combined. Reduce to low speed, and slowly add in dry ingredients. Keep beating until it's all mixed up. 

Place rest of the sugar in a shallow bowl. Roll a ball of dough (about 1 1/2 - 2 inches) in sugar, and place on baking sheet. Repeat with the rest of the dough.

Bake for 8-10 minutes, and until the edges are lightly browned. Remove from oven, and set on a cooling rack. 

As cookies are cooling, top with sprinkles of your choice. 

Makes: About 18 cookies
