Little Lamb Cupcakes

These fluffy little lamb cupcakes are sure to sweeten up your spring, and would make a perfect addition to any Easter table or Lions and Lambs party you have coming your way.


The stiff, buttercream peaks give each lamb its fleece, while a crunchy Oreo cookie peaks out behind mounds of fresh frosting. All this piled on top of a fluffy chocolate-cream cheese cupcake, making this one luscious lamb! Whip a batch of these decadent cakes for your very own flock of fleecy lambs.

Ingredients:

For Cupcakes:

1 box devil’s food cake mix

4 large eggs

1/2 cup vegetable oil

1/2 cup water

1 8 ounce package cream cheese, room temperature

Oreo cookies, halved

For Frosting:

1 stick unsalted butter, room temperature

4 cups confectioner’s sugar, sifted

1 tablespoon vanilla extract

1/4 tablespoon salt

3-4 tablespoons whole milk

Directions:

Preheat oven to 350°F and line two cupcake tins with 12 paper liners. In a large mixing bowl fold softened cream cheese into cake mix.

Add oil, water and eggs and beat until just combined using an electric mixer. Stop machine, and using a robber spatula carefully scrape batter off the sides of the bowl. Continue mixing until smooth and all ingredients are incorporated, about 3 minutes.

Using an ice cream scoop or small ladle, fill each lined cup a 3/4 of the way up, place pans in oven and allow to bake for 15 minutes or until cake springs back when gently pressed. Allow to cool completely before frosting.

In a medium mixing bowl, using a hand-held electric mixer, whip butter until light and fluffy. Stop machine and add in sifted sugar and continue mixing at a low speed until sugar is well incorporated, about 3 minutes.

Increase mixer speed to medium and slowly and steadily add remaining ingredients until well combined.

Beat for an additional 3 minutes. If frosting is thicker than you’d like it to be simple add another tablespoon of milk, and continue to beat, repeat until desired consistency is achieved.

Using a dull knife, spatula or palate knife frost cooled cupcakes using upward sweeping motions to form stiff but fluffy peaks.

Top with Oreo half angled so it looks like a lamb’s head peeking from out of curls of fleece.
