Low-Cal Watermelon Mojito

I've never been a huge fan of the classic Mojito - there's just something missing from it so far as I'm concerned. Lately, I've been playing around with this summer drink because I'd really like to be able to enjoy one more often.


Last time I made a mojito, I shunned the mint and rum all together and instead, used cilantro and tequila for a tangier version . Over the weekend, I found myself with a gifted bottle of white rum, half a watermelon and more mint then I could imagine. So, I decided I'd give this sip another go.

Turns out, I'm a big fan of watermelon mojitos and especially this recipe. For one thing it's chock full of fresh flavors thanks to the watermelon and mint. For another, the use of Sweet N' Low versus a spoon full of sugar keeps calories even further in check. Livestrong.com counts a typical mojito at a 200 calories. I cut that nearly in half with this version.

Ingredients:

1 1/2 ounces Bacardi white rum

4 mint leaves

1 Sweet 'N Low packet

1 tablespoon fresh watermelon

Club Soda

Mint leaf for garnish

Directions:

In a cocktail shaker, muddle your mint leaves, Sweet 'N Low and watermelon.

Next, add in your ice and rum. Cover and shake until well combined.

Pour all ingredients into a tall glass, then top with club soda. 

Garnish with mint leaves, if desired.
