Boozy Strawberry, White Peach & Lime Layered Margarita Popsicles

I love the food, festivities, and celebration that is Cinco de Mayo. Mostly, I love the margaritas! I cannot wait to kick off the summer this year by combining two of my favorite treats; margaritas and popsicles!


I have always been a dessert girl. Growing up, my dad would say that no matter how much you ate for dinner, you still had room for dessert in your "dessert pocket." I think that’s true for me. I can never say no to a good dessert. Combine that with one of my favorite adult beverages, and you have a winner!

There is nothing better on a hot summer day than a refreshing margarita. I’m really hoping that this year Cinco de Mayo will be a hot and sunny day (let’s be done with this winter cold already, OK?). Perfect for a hot and sunny day? Popsicles!

 

 

To make this tasty treat festive for Cinco de Mayo, I made three flavors in one, representing the colors of the Mexican flag. Strawberry Margarita for red, White Peach Margarita for White, and Lime Margarita for green. Each section is made with simple ingredients to make the entire process easy, fun, and refreshing. Each is sweetened with agave nectar and the White Peach is made with diet soda to make them (slightly) better-for-you! Happy Cinco de Mayo!

 

 

Ingredients

For the Strawberry Section:

  • 4 strawberries, blended in a food processor to create very small pieces
  • 1 cup Strawberry Blend Juice (I used Naked Brand Berry Blast)
  • 1 tablespoon  good tequila
  • 1 tablespoon  agave nectar
  • 1/2 tablespoon  fresh lime juice

For the White Peach Section

  • 1 white peach, blended in a food processor to create very small pieces
  • 1 cup diet sierra mist (or other lemon lime soda)
  • 1 tablespoon good tequila
  • 1 tablespoon agave nectar
  • 1/2 tablespoon fresh lime juice

For the Lime Section

  • 3 tablespoon limeade concentrate
  • 1 cup water
  • 1/2 tablespoon agave nectar
  • 1 tablespoon good tequila
Directions

Combine the ingredients for each section in 3 separate cups/containers.

Spoon 1/6 of strawberries into each popsicle mold. Pour 1/6 of strawberry margarita mixture into each popsicle mold, pouring to about 1/3 of the way up the popsicle mold Allow this section to freeze for at least 2 hours before proceeding to next section

After strawberry section has been in freezer for at least 2 hours, spoon 1/6 of the fresh peaches into each mold. Pour 1/6 of the peach margarita mixture into each mold, this time the molds will be filled about 2/3 of the way up. Allow this section to freeze for at least 2 hours before proceeding to the final section.

After peach section has been in freezer for at least 2 hours, top with lime margarita mixture, if desired, cup small lime pieces to place at the top of each popsicle. Allow to freeze for at least 2 hours or until completely frozen through. Enjoy!
