Mexican Egg Breakfast Burritos Recipe

Breakfast burritos are delicious any day of the week, but we're big fans of making them on a game day morning. So often, our team hits the field earlier in the day and if we're planning on tailgating, these breakfast burritos are the perfect replacement for typical burgers and dogs.


Ingredients
  • 1 package tortillas
  • 1 dozen eggs
  • 1 green pepper, diced
  • 2-3 medium tomatoes, diced
  • 1 bag baby spinach leaves
  • 1 can black beans, drained and rinsed
  • 1 package shredded cheddar cheese
  • 1 jar salsa (optional)
  • 1 avocado (optional)
  • 1 container plain Greek yogurt (optional)
Directions

The night before:

Pre-chop the green peppers and tomatoes and store in a container. Crack eggs and bring in a separate container with a locking lid.

 

While at the tailgate:

Place an iron skillet on the grates of a medium-hot grill. Spray with nonstick cooking spray, add spinach, and cook until just wilted, about 4-5 minutes. Add eggs and scramble until cooked.  Add green peppers, tomatoes, and black beans, cooking until heated through, about 5-6 minutes.

 

Warm up tortillas on grill just until soft. Fill up tortilla with eggs, sausage, cheese, and salsa, avocado, and plain Greek yogurt, if desired. Roll up, pinching sides in so filling doesn’t spill out.

Cook Time: 10 minutes
