Mint Chip Ice Cream Pie Recipe

No one can resist ice-cold treats this time of year! So for an alternative to your typical birthday cake, whip up this refreshing ice cream pie that will put a smile on your guests’ faces. 

Let yourself get creative by experimenting with different kinds of ice cream. Although mint is great for summer, you can also use peppermint, raspberry, or any of your favorite flavors!

  • Half package of chocolate sandwich cookies with vanilla center (Oreo style)
  • 4-5 tablespoons melted butter
  • Half-gallon mint chip ice cream (or any flavor that you like!)

Preheat oven to 350 degrees.

Put cookies in food processor and pulse until finely crumbled.

Set aside 3 tablespoons of cookie crumbs.

Melt butter in microwave-safe bowl.

Mix cookie crumbs and butter together in bowl, then dump them into a 9-inch pie dish. Press mixture firmly across bottom and halfway up the sides of pie dish to create crust. Bake at 350 degrees for 10 minutes and remove from oven.

Let crust cool completely. Add slightly softened ice cream on top of crust; spread evenly.

Sprinkle reserved cookie crumbs to top of ice cream and put in the freezer uncovered until frozen solid. Once frozen solid, you can cover the cake if you need to store it for a few days.

Rest pie on counter for a few minutes before serving to make slicing easier. Enjoy!
