Orange Marmalade and Thyme Scones

There’s just something about scones that make me feel a little bit fancy for those few blissful moments while I enjoy them. I love making a fresh batch early on a weekend morning (especially if I had overnight guests) and then pairing them with a few steaming cups of coffee or tea.


These fresh scones strike the perfect balance of soft, yet crumbly pastry and the sweet marmalade flavor practically begs guests to come back for seconds. Although I used an orange marmalade, you can certainly get creative with apricot or other flavors.

 

 

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 1 1/2 tablespoons fresh chopped thyme
  • 2 eggs
  • 1/3 cup milk
  • 3/4 cup orange marmalade
Directions

Preheat oven to 400 degrees F and coat a baking sheet with cooking spray.

Combine the flour, baking powder, sugar and salt in a bowl. Cut in butter until mixture resembles a coarse meal. Stir in fresh chopped thyme.

In separate bowl, whisk eggs and milk together and stir into the coarse mixture just until moistened. Gently knead 2 times.

Turn dough onto a floured surface and knead 4 more times.

Divide dough in half. Lay one portion on the baking sheet and form a 7-8 inch circle. (You can use a bowl or anything on hand.)

Spread marmalade to within 1/2 inch of edge of dough.

Pat remaining dough into a second 7-8 inch circle. Lay this round on top of marmalade and gently pinch edges together. Cut round into eight wedges, but do not separate.

Bake at 400° for 16-20 minutes until golden brown. Serve warm.

Makes: 8 scones
