Patriotic Berry Parfaits with Homemade Blueberry Sauce

Fruit parfaits are fun to create because they are quick and easy and there are an endless amount of ingredients to choose from.  

For this Patriotic Berry version, I made an easy Homemade Blueberry Sauce, and layered it with vanilla yogurt, fresh strawberries, and granola. Feel free to have fun and play around with these fresh ingredients.



To Assemble the Berry Parfaits:

  • 1 recipe homemade blueberry sauce, below
  • 3 cups vanilla yogurt
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups granola
  • Powdered sugar, for sprinkling

For the Homemade Blueberry Sauce:

  • 2 cups fresh blueberries (If you can’t find fresh blueberries, frozen are fine, just be sure to thaw the blueberries before you make the sauce)
  • 4 tablespoons sugar
  • 1/4 cup + 3 tablespoons apple juice (preferably fresh apple juice not from concentrate, but any kind will work)
  • 1 tablespoon cornstarch
  • Splash of pure vanilla extract

Start by Making the Blueberry Sauce: Place the fresh blueberries in a medium saucepan over medium heat. Add the sugar and apple juice, and allow the blueberries to cook until they begin to extract their juices. Add the cornstarch and vanilla and stir until there are no lumps of cornstarch. Cook the mixture until it comes to a boil and leave it on the stove for about 7 minutes, stirring occasionally. Remove the pan from the oven and allow the blueberry sauce to thicken and cool.

For this recipe, I think it’s best to allow the blueberry sauce to completely cool. To speed up the process, you can place the sauce in the refrigerator.

To Assemble the Parfaits: Place 6 clear cups next to each other on the counter. I like to create an assembly line to assemble the parfaits. First, put a spoonful of the homemade blueberry sauce on the bottom of each cup. Layer with vanilla yogurt, fresh sliced strawberries, and more blueberry sauce. Top with granola and a sprinkling of powdered sugar.

Feel free to play around with the layering of the parfaits. There is no correct order as long as all the ingredients are layered into the clear cups.

Serve immediately or place in the refrigerator until ready to serve. These are best enjoyed with 24 hours of assembling.



Makes: About 6 parfaits, served in small clear cups.
