Peanut Butter Cinnamon Coffee Muffins

Peanut butter and cinnamon are such a delicious combination, but you don't see them paired together nearly enough. For this muffin recipe, I wanted the bold flavors of coffee and cinnamon to complement the smooth peanut butter taste. Luckily, the outcome was a success! 


Those three main flavors really come together perfectly in this muffin recipe to make an incredibly tasty treat. They are soft, crumbly and not even one bit dry. When I planned on setting up an iced coffee bar, I wanted to have a treat that would complement the flavor of coffee nicely, while still being satisfying. I think these muffins do just that! 

 

 

Ingredients
  • 1 cup whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/4 cup peanut butter, creamy
  • 1 1/2 cups sugar
  • 1/4 cup Fannie May coffee
  • 1/3 cup applesauce
  • 1 teaspoon pure vanilla extract
Directions

Preheat the oven to 350 degrees F. Line two muffin pans with baking liners. Set aside until needed.

In a medium bowl, whisk together the whole wheat flour, all purpose flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In the bowl of a stand mixer, beat together the butter, peanut butter, and sugar. Scrape down the sides of the bowl, and stir in the applesauce, coffee, and vanilla. Slowly incorporate the flour mixture and mix until no flour is showing.

Using an ice cream scoop, divide the batter among the prepared baking liners. Bake the muffins until they turn golden brown and a toothpick inserted into the center of a few muffins come out clean, about 20 minutes.

Allow the muffins to cool slightly, or completely depending on your preference, and then serve.
