Pretty Hibiscus Flower Popsicle Recipe

Don’t be fooled by its pretty petals—hibiscus is no wallflower. Teeming with robust, tangy flavor, with a hint of earthiness, hibiscus offers a bold and exotic taste we can’t seem to get enough of.

A hint of lime and unique floral flavor go a long way to refresh and inspire in these eye-catching homemade popsicles. The perfect pick-me-up for sweltering summer days, these frozen treats will help you keep a cool head as temperatures climb.

Make these boozy popsicles for a more grown-up treat - just freeze with a shot of your favorite liquor added!

Get your hibiscus flowers from any grocery store that sells gourmet goods.


1/2 cup dried hibiscus flowers

Juice from 4 limes

2 tablespoons honey

1/2 cup sugar

3 cups water

Special Equipment:

Popsicle molds


In a small saucepan bring 3 cups of water to a gentle boil. Add hibiscus flowers and stir until completely moistened. Stir in 1/4 cup sugar until thoroughly dissolved, and reduce heat to a simmer. Allow tea to steep for up to 8 minutes until water is a dark shade of pink. Remove mixture from heat and strain into a nonreactive container. Discard flowers and allow to cool.

Meanwhile, make your limeade by combining lime juice, remaining sugar, honey, and water in a pitcher. Stir mixture until sugar and honey have completely dissolved and chill in fridge.

Fill popsicle molds about half way with cooled hibiscus mixture. Place molds in the freezer to chill for about 35-40 minutes or just until mixture begins to set. Remove molds from freezer and top off with chilled limeade, insert sticks and return to freezer until popsicles are completely frozen, about 1 hour.
