Raw Vegan Banana Tiramisu

Few things are more decadent than tiramisu. Its airy and creamy textures are infused with bold vanilla and coffee notes for a drool-worthy dessert guests will just eat up! This recipe combines all of the flavors and richness of tiramisu, while packing a huge punch of nutrition and subtracting the guilt.

The decadent tiramisu makes for a perfect holiday dessert for those health-conscious family members, or anyone counting calories. The best part is it doesn't even taste "healthy," so anyone can enjoy the creamy treat.

Ingredients
  • 8 bananas
  • 24 khadrawy dates (or 16 medjool) (soaked in water for one hour, and drained)
  • 1 cup cashews* (soaked in water for one hour, and drained)
  • Splash of apple cider vinegar
  • Juice of 2 lemons
  • 1 teaspoon salt
  • 3-4 tablespoons of Teecino (or your favorite coffee/coffee substitute)
  • Sprinkle of vanilla bean (or extract)
  • Sprinkle of cinnamon
  •  
  • *If you would like to keep this recipe low fat, substitute cashews with 4 frozen bananas
Directions

To make the coffee-infused “mascarpone”, combine cashews, Teecino, juice of 2 lemons, 1 tsp of salt, 8 khadrawy dates (or 4 medjool), and a splash of apple cider in food processor. Pulse until creamy. Or for the low fat version, Combine 4 frozen bananas, 8 khadrawy dates (or 4 medjool), and Teecino in food processor. Pulse until creamy. Set aside.

To make the caramel sauce, combine dates with 1/4 cup of water in a food processor. Pulse until creamy. Set aside.

Now it's time to make the cinnamon-vanilla cream. Combine 2 bananas, a sprinkle of cinnamon, and a sprinkle of vanilla bean in food processor. Pulse until creamy. Set aside.

Now that you have all of the elements ready, it's time to put them together! Slice remaining bananas lengthwise into thin layers. Line bottom of tray with banana slices (a deep casserole dish works best).

Spread on a layer of the “mascarpone”. Cover with banana slices. Spread on a layer of caramel sauce. Cover with banana slices. Next, spread on the layer of cinnamon vanilla sauce. Continue covering each layer with banana slices and alternating the sauces! Serve immediately.
