Red Velvet Rocky Road

My kids loved this recipe. I think it was the "red" chocolate that they found so alluring. Most of the colored Candy Melts taste like white chocolate or vanilla in the candy recipes I share.


Technically, white chocolate is not chocolate but vanilla-flavored cocoa butter. Fine with me!

Since I'm not a real fan of dark chocolate and have always preferred white chocolate, I prefer these candy melts to dark morsels. And since most kids tend to gravitate to a lighter chocolate instead of a darker chocolate, you may want to consider sticking to the sweeter option, as well.

And in case you haven't noticed, dessert connoisseurs are suckers for any 2-in-1 dessert combo. It's no coincidence that chocolate chip cookie dough and mint chocolate chip are both in the running for top 10 most popular ice cream flavors. Combining 2 already incredible flavors usually makes for one ultra mind blowing dessert that will give you cavities by just looking at it! Okay, maybe you won't really get cavities but we can definitely feel that post-dessert sugar rush settling in.

Our extra sweet red velvet and rocky road combination certainly deserves a spot up with those favorites, so we dare to you taste test try this sugary combo and tell us we're wrong!

This recipe is so easy you kids could make it for their school Valentine's Day party or as a gift for the teacher. If planning to bring to your child's classroom for their February 14 celebration, you should always make sure none of your child's classmates have walnut allergies. This can be done by simply asking the teacher or giving the main office a call.

Ingredients
  • 2 1/2 cups red candy melts chips (14 oz. bag)
  • 1 cup mini marshmallows
  • 1/2 cup walnuts
Directions

Butter an 8-inch square pan.

Melt candy melts in a medium-size microwaveable bowl for 10-second increments. Be sure to stir after each melting as to not burn the mixture. Melt until smooth.

Stir in marshmallows and nuts and pour into buttered pan.

Chill until the mixture sets.

Cut into small squares.

Serves

Makes about 1 pound
