Red, White, and Blue Frozen Fruit Salad

Frozen fruit salad is the ultimate healthy yet delicious alternative for your summer party. The combination of red and blue berries with white juice make for the perfect patriotic dessert recipe for your 4th of July or Memorial Day celebration!


These edible glasses - made from frozen juice - offer a cool twist on popsicles that both little guests and grown-ups alike will be reaching for on a hot summer day. For this family-friendly recipe, I made the cups by pouring fresh white fruit juice (pear, grape, cranberry or a blend will do) into shot glass ice mold trays, and then I allowed them to set over night. If you can’t find shot glass molds at your local craft or kitchen store, though, just fill small disposable party cups with the juice, and use a melon baller to carve out the core to achieve a similar look.

There are so many variations that you can create to make these frozen fruit cups unique! I filled them with fruit salad, but you can put your own spin on them by filling them with ice cream, a summer cocktail, a fruit smoothie, whipped cream, or jello.

Ingredients:

4 cups of red, white and blue fresh fruit, served in bite size pieces

8 cups of white juice (white pear, grape, cranberry or a blend)

Directions:

Pour the juice into the molds and allow them to set in the freezer over night. Just before serving, remove from the freezer, and place the molds on a tray.

Fill each mold with a variety of fresh red, white, and blue fruit.

To keep the cups from melting on a hot summer day, serve them right out of the freezer, or—if you’re having an outdoor party far from home—wrap them in plastic wrap and keep them your ice chest.
