Rosemary Roasted Potatoes

Potatoes are a wonderful side dish for Christmas dinner. Not only are they are starchy and fillin without having to eat actual bread, but they are a great Gluten Free option, too! Potatoes are naturally Gluten Free so no added flour (or wheat) is needed. Just add some wonderful ingredients and you have a delicious side dish that's sure to satisfy.


There are so many ways to prepare potatoes, but one of my favorites is roasted. By roasting potatoes, you allow the outsides of the potatoes to get a little crunch while the inside is still perfectly soft.

A great way to add extra flavor to roasted potatoes is by adding fresh rosemary to the potatoes. My favorite thing to do is to add chopped rosemary and whole rosemary to the potatoes before you roast them.

 

Ingredients
  • 4 pounds of Russet Potatoes
  • 4 Sprigs of Fresh Rosemary
  • 4 tablespoons Olive Oil
  • Salt and Pepper, to Taste
Directions

Preheat the oven to 375 degrees F. Line a baking sheet with foil or parchment paper. Set aside until needed.

Wash and peel the potatoes and then cut them into 1-inch square pieces. Transfer the potatoes to the prepared baking dish. Remove the rosemary leaves from 2 of the sprigs and finely chop the rosemary.

Drizzle the potatoes with the olive oil and then sprinkle them with chopped rosemary, salt and pepper. Place the remaining 2 rosemary sprigs (with the leaves attached) on top of the potatoes.

Transfer the potatoes to the oven and bake until they have cooked throughout, are soft inside, and have turned a golden brown, about 30 minutes.

Remove the rosemary potatoes from the oven and discard the 2 whole rosemary sprigs. Transfer the potatoes to a serving dish and serve immediately.

These potatoes last up to 4 days in a sealed container kept in the refrigerator.
