Savory Sausage Nachos

Nachos are one of the most delicious and popular foods to enjoy during a baseball game. There’s nothing like a big bowl of chips doused in creamy cheese sauce. I can eat basic nachos (chips, cheese and jalapenos) all day long, but I love creating unique nacho recipes that aren’t quite your normal nachos.

In this below recipe, I added diced chicken sausage and fresh cilantro on top of homemade colby-jack nacho cheese sauce. For the World Series, enjoy this savory nacho recipe that's perfect for a group. Just a little twist is all it takes to spruce up your basic nachos!


  • Medium-sized bag of tortilla chips, lightly salted (about 10 cups)
  • 1 batch homemade colby-jack nacho cheese sauce (recipe below)
  • 3 chicken sausage links, diced and sautéed until fully cooked
  • Cilantro, shopped, for topping
  • For the Homemade Colby-Jack Nacho Cheese Sauce:
  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 3 cups Colby-Jack cheese
  • Pinch of salt

To make the nacho cheese sauce, melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the flour has soaked up all the butter and has slightly browned.

Add the milk and allow the milk to slightly thicken. Be sure to whisk the milk every so often so it doesn’t burn on the bottom. Remove the pan from the stove and whisk in the cheese.

Continue stirring until the cheese has melted completely. Stir in the salt.

Use immediately to top your nachos.

Serves: 6-10
