Savory Scallion Wrapped Veggies

Talk about an award-worthy appetizer… these colorful and healthy scallion wrapped vegetables are one of easiest snacks that you could possibly dream up!


The best thing about these colorful bites is that they are incredibly elegant looking, yet are assembled in a snap. These would especially make a perfect healthy addition to any Awards Night bash that you’re hosting this year!

 

 

Ingredients
  • Scallions, root end trimmed
  • 2 Yellow peppers
  • 2 Orange peppers
  • 2 Red peppers
  • 2 Large zucchini
Directions

Wash peppers, zucchini, and scallions.

Cut peppers and zucchini into very thin slices length-wise to create a colorful pile of crudité.

Blanch vegetable slices and scallions so they are crisp, but not raw. Then “shock” each piece in cold water to stop the cooking. (This process will leave each item looking bright and vibrant.)

Gather a small handful of vegetable slices (aim for a rainbow of colors) and secure each bunch by tying a piece of scallion around it.

If needed, secure scallion with a toothpick.
