Simple and Easy Eton Mess Pudding Dessert

A popular pudding in England made famous by the well-known Eton School where Princes William and Harry graduated from, you could say this pudding is fit for a king.  

Eton Mess is a simple pudding made from fresh meringue and summer fruits. It is not the quickest pudding to make, but it is certainly going to be one of the best.

Adding a dollop of fresh cream makes it even more delightful, however if you don't have it make sure that you add plenty of summer fruits to keep it moist!


8 eggs

4 1/2 cups of white granulated sugar

A large bowl of fresh raspberries

Fresh cream


Pre-heat your oven to 200 degrees Fahrenheit.  

Separate your egg whites from their yolks.

In a glass mixing bowl mix the egg whites, adding sugar slowly to create a white satin mixture with high peaks. If you are mixing by hand the process generally takes close to 20 minutes, less if you are using a mixer.

Once the mixture is satin like, spoon dollops of it on to a buttered baking tray and cook for 3-4 hours until the dollops are stiff, golden and can easily be removed from the baking tray -- they should feel bone dry.  

Remove from the baking tray and allow to cool to room temperature.

While they are cooling, add your raspberries to a large mixing bowl and add a dash of sugar while mixing the fruit until is liquefies into a runny mixture.  

Next, add broken portions of your meringue to your bowl and mix gently together.

Spoon the 'mess' into a serving bowl and top with cream (if so desired) and serve immediately.
