Simple Antipasto Salad Recipe

A simple antipasto salad is a great way to start out your Italian dinner party. There is very little preparation, and it’s incredibly easy to put together. To create this salad, all you need is your favorite lettuce (I use Arugula), salami, provolone cheese, artichoke hearts, cherry tomatoes, and pepperoncini. These ingredients are simple and can be found at any grocery store—but feel free to be creative and add some of your other favorite Italian ingredients.
What I like best about starting out dinner with a simple salad is that it can be made in advance. Throw all of the ingredients together in a bowl, and then place it in the refrigerator until you’re ready to serve. Right before dinner, make the dressing and toss it with the salad. You can plate the salad yourself, or keep it in the bowl and have the guests serve themselves.
- 7 ounces (about 8 cups) arugula, washed and dried
- 5 large slices of provolone cheese, cut in half and then sliced
- 7 large sliced of salami, cut in half and then sliced
- 1 cup artichoke hearts, sliced
- 1 1/2 cups cherry tomatoes
- 1 cup pepperoncini’s, thinly sliced
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- Salt and pepper, to taste
In a large salad bowl, toss together the arugula, provolone cheese, salami, artichoke hearts, cherry tomatoes, and pepperoncini.
In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper.
Pour the dressing over the salad and toss to coat the salad completely. If needed, add more salt and pepper. Serve immediately.
