Skinny Raspberry Prosecco Cocktail

There's something about chilled sparkling wine that makes any occasion feel a little bit more elegant and sophisticated. Even if it's just enjoying a cocktail after work on a Wednesday, make it a little bit more special with a splash of Prosecco.

Prosecco, like Champagne, is a sparkling wine that is great on its own, but mixes wonderfully with fruit and other liquors for a special sparkling cocktail.

Some Proseccos can be a little sweet and others dry, but I like mine somewhere in the middle. For a light summer cocktail that's not heavy in calories, I reached for Skinnygirl's Prosecco. It tastes fine on its own, but the flavors really popped when I added some raspberry liqueur and fresh raspberries. It was the perfect drink to enjoy on a lazy Sunday evening with some of my girlfriends, but would also be great to serve at a bridal shower, bachelorette party or any sort of girls night out (or in!).

I started with some fresh berries, then added some Chambord, followed by the Prosecco. Just make sure you chill your sparkling wine for a couple hours before serving. Champagne flute + cute striped straw not mandatory, but highly encouraged.

In a champagne flute, muddle the raspberries with a long cocktail spoon until a good amount of juice emerges.

Add in the raspberry liqueur, and top with chilled Prosecco. (Cute straw = optional).
