Skinny Rainbow Cupcakes

This cupcake is always a fan favorite, as the adults love the moisture packed, 100 calorie cupcake, and the kids adore the fun colors and great taste!


Skinnymom.com created this pretty and equally tasty skinny cupcake recipe for you to enjoy some sugar this summer, without feeling guilty over calories.

Ingredients

1 box vanilla cake mix, dry mix only
4 egg whites
1 6 ounce container Yoplait Light Vanilla Flavored Yogurt
1 teaspoon vanilla
Red gel food coloring
Green gel food coloring
Orange gel food coloring
4 ounces Cool Whip Free (1/2 of an 8-ounce container)
Optional: Colored Sprinkles

Directions

Preheat oven to 350 degrees. Line muffin pans with cupcake liners. For this recipe, use foil liners to make sure that the white part of the cake doesn’t turn golden brown.

Do not use non-stick spray in the muffin pans. In a large bowl, mix dry cake mix, egg whites, yogurt, vanilla, and one cup of water. Mix until blended for 2-3 minutes. Separate the batter equally into three smaller bowls.

In one bowl, add 3-4 drops of red gel food coloring or more depending on how deep you want the color. Make the color a dark red as it will appear lighter after baking. In the second bowl, add 3-4 drops of green gel food coloring or more depending on how deep you want the color. Make the color a dark green as again it will appear lighter after baking.

Drop 3-4 drops of orange gel coloring into the third bowl. Using a spoon, gently spoon the red colored cake mix into the bottom of each cupcake liner making sure to not get the cake mix on the sides of the liner.  You should fill each cupcake liner with the red colored cake mix until 1/4 full. Gently use the back of the spoon to even out and smooth out the red colored cake mix in each cupcake liner.

Next, using a clean spoon, spoon the green colored cake mix into the cupcake liners, directly on top of the red colored cake mix, making sure not to let the spoon touch the red colored cake mix.  

Fill the cupcake liners with 1/4 of the green cake mix, cupcakes should now be 1/2 full. Gently use the back of the spoon to even out and smooth out the green colored cake mix in each cupcake liner making sure not to mix the green cake mix with the red colored cake mix.

Next, using a clean spoon, spoon the orange colored cake mix into the cupcake liners, directly on top of the green colored cake mix, making sure not to let the spoon touch the white green cake mix.

Fill the cupcake liners with 1/4 of the orange colored cake mix, cupcakes should now be 3/4 full. Gently use the back of the spoon to even out and smooth out the orange colored cake mix in each cupcake liner making sure not to mix the orange colored cake mix with the green colored cake mix or the red colored cake mix.

Bake cupcakes in oven for 15-20 minutes until center of cupcakes is set and toothpick inserted comes out clean.Allow cupcakes to cool and top each cupcake with 1 tablespoon of Cool Whip Free topping.Add sprinkles on top as an optional decoration.
