Skinny Red Velvet Cookie Dough Dip

What is Valentine’s Day without chocolate? A day that is filled with roses, hearts and all things red and pink only deserves a dessert that you can share with your sweetheart or finally let your kids enjoy a big bowl of cookie dough! 


Skinny Red Velvet Cookie Dough Dip is secretly healthy but no one has to know, as it is full of cookie dough flavor but none of the guilt! The secret ingredient is chickpea’s mixed with some peanut butter and a touch of sweetener. The result is a giant bowl of ‘cookie dough’ that you won’t be able to put down!

 

 

Ingredients
  • 1 1/2 cups chickpeas (drained and rinsed very well)
  • 1/2 teaspoon plus 1/16 teaspoon salt
  • Tiny bit over 1/8 tsp baking soda
  • 1 tablespoon pure vanilla extract
  • 1/4 cup nut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon dark cocoa powder
  • Few drops of red food coloring
  • 1/4 - 1/2 cup stevia (depending on how sweet you want it)
  • 2 tablespoons of oats
  • Up to 1/4 cup almond milk, only if needed
  • 3 tablespoons mini chocolate chips
  • To serve: Strawberries, Graham Crackers
Directions

Combine all ingredients in a blender, except chocolate chips.

Puree very well. May need to use a spatula to move mixture around. Add milk to help combine mixture if needed.

Once pureed very well. Taste for sweetness. If you want it sweeter, add more maple or stevia.

Transfer to mixing bowl and fold in chocolate chips. Serve with strawberries and graham crackers! The possibilities are endless on what to serve this delicious dip with...marshmallows, pretzels and apples would be great as well!
