Skinny Summer Desserts

As health trends continue to sweep the nation, there are people everywhere looking to lessen their sugar, carb, and fat intake, to eat cleaner and to maintain a healthier, active lifestyle.

Most diets or healthy eating plans will be sabotaged if your body feels completely deprived of what it loves most. In order to keep yourself on your healthy eating track, we teamed up with our friends at SKINNYMOM.COM to create a series of skinny swaps for desserts to share with busy moms, in hopes to support their healthy lifestyle choices while encouraging them to indulge every once in a while.


They had our sweet lovers in mind with these five Skinny Dessert recipes. Skinnymom.com adapted some of the best of the best traditional desserts by making them healthier with their favorite skinny swaps. 

The original calorie packed, sugar loaded desserts are transformed into equally delicious, low cal, low fat treats that your whole family will enjoy!

 

Skinny Rainbow Cupcake 

This low-calorie cupcake is just 100 calories! Not only will your diet thank you but the kids will love the these colorful and tasty cupcakes.

Skinny Walnut Brownies

These brownies have the same delicious rich chocolate taste, but can be eaten guilt-free as the pumpkin takes the place of butter and eggs and adds a ton of moisture.

  • 1 box low fat brownie mix
  • 1 can pumpkin
  • 1/2 cup chopped walnuts
Directions

Preheat oven to 325 degrees. Add brownie mix, pumpkin, and walnuts into a bowl and stir until mixed. Bake for 20-30 minutes.

 

Skinny Chocolate Raspberry Cake Pops

Cake pops are all the rave with kids and adults alike. What is more fun (and adorable) than a portion size cake on a stick?!

We’ve adapted the infamous cake pop recipe with some skinny swaps that will make these tasty bites much less of an impact on your waistline.

Ingredients
  • Chocolate Cake Mix 
  • 1/2 cup All Natural Raspberry Preserves 
  • 1 Raspberry flavored lightyogurt
  • 4 egg whites 
  • 1 Chocolate Baking Bar 
  • 1 teaspoon vanilla 
  • 2 tablespoons Splenda Lolipop sticks 
  • Optional: Sprinkles for topping 
Directions

Preheat oven to 350 degrees. In a stand-up mixer, mix dry cake mix, raspberry yogurt, egg whites, and 1 cup of water.

Pour cake mix into a greased cake pan and bake for 20-22 minutes until done.Top cake with Raspberry Preserves and then mash the cake with the preserves to evenly distribute raspberry preserves.

Roll crumbled cake into small 1 inch balls and place on parchment paper to cool and place in freezer for a few minutes. Melt down chocolate baking bar and add Splenda and Vanilla.  

Stick the lollipop sticks into the cake balls and dip into melted chocolate.  Place the cake pops into a Styrofoam brick to cool or if adding toppings, immediately dip cake pops into desired toppings and then place into Styrofoam brick to cool.  

 

Skinny Blueberry Vanilla Cake Pops

If you prefer vanilla over chocolate, you can still enjoy a sweet skinny cake pop!

Ingredients
  • Vanilla Cake Mix
  • 1/2 cup All Natural Blueberry Preserves 
  • 1 Blueberry flavored light yogurt :
  • 4 egg whites 
  • 1 Vanilla Baking Bar 
  • 1 teaspoon vanilla 
  • 2 tablespoon Splenda 
  • Lollipop sticks 
  • Optional: Chopped nuts for topping

Directions

Preheat oven to 350 degrees. In a stand-up mixer, mix dry cake mix, blueberry yogurt, egg whites, and 1 cup of water.

Pour cake mix into a greased cake pan and bake for 20-22 minutes until done.

Skinny Chocolate Chip Protein Cookies

Can you imagine planning a chocolate chip cookie as part of your healthy snacks throughout the week?!

Well, now you can with these skinny chocolate chip cookies packed with protein and made without using oil or butter!

Ingredients
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 scoop Chocolate Protein Powder
  • 1 egg white
  • 2 tablespoons apple sauce
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup chocolate chips
Directions

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper and spray with non-stick cooking spray. In a large bowl, combine the flour, protein powder, baking soda and salt and stir to blend. 

In another bowl, whisk the sugars, egg white, applesauce and vanilla together until light and fluffy. Whisk the dry ingredients into the wet ingredients in two additions until the batter is very well blended.

If the batter looks more “crumbly” than smooth, add just a drop of water at a time (ONLY if needed) until it smoothes out.

Drop the batter by spoonfuls onto cookie sheet. Bake 8-10 minutes and let cool.
