S'Mores Cookies

Bake a more sophisticated s'mores dessert - these cookies aren't only cute to look at, they taste dee-licious! These cookies embody the flavor of the campfire dessert without having a bunch of wooden sticks to throw out and marshmallow goo residue all over the place.


Even though it's true that half the fun of s'mores is making them, but we don't always have access to a bonfire. So we'll stick to the next best thing - infusing our already delicious desserts with the trifecta of summer: graham crackers, marshmallows, and chocolate chunks. It may not be the real thing, but trust us - these treats are just as delicious and of course way easier to eat! Besides, we'd prefer having our s'mores treats prepped before the party for less mess and chaos.

Serve this alongside our s'mores mocktail for an added dose of chocolatey goodness. And if you're feeling really risque, try dunking your cookies into the mocktail for the ultimate s'mores delicacy. My stomach is getting butterflies just thinking about the ooey gooey goodness!

Ingredients:

1 cup graham cracker crumbs

1 3/4 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 cup butter, softened

3/4 cup brown sugar

3/4 cup granulated sugar

2 teaspoons vanilla

2 eggs

1 3/4 cups mini semi-sweet chocolate chips

2 cups mini marshmallows

8 snack-size Hershey bars divided into 4 segments

Directions:

Preheat oven to 375 degrees.

With electric mixer, beat butter and sugars until light and fluffy.
Add the eggs and vanilla, mixing until combined.

In a large bowl, mix the flour, graham cracker crumbs, salt, and baking soda together.

Add the flour mixture to the butter mixture and mix well. Stir in the chocolate chips.

Scoop and round about 2 tablespoons of dough and then drop onto cookie sheets lined with parchment paper.

Bake for 8 minutes and then remove from the oven and press five mini marshmallows on the top of each cookie in the shape of a star. Press a segment of the chocolate bar in the center of each marshmallow star, and then return cookies to the oven to bake for about 2 more minutes.

Remove cookies from baking sheet and cool on a wire rack.

Serves:

Makes about 3 dozen.
