Spanish Omelet Bites Appetizer Recipe

For your next wine-tasting party, consider a Spanish theme - some good old Rioja and a menu of simple tapas will set the stage for a perfect evening, guaranteed. 


There is something so festive about offering a delicious spread of light tapas, but when you also add the full-bodied experience of a Spanish red wine, you have the true equation for a fabulous little get together. Your guests will love sampling the finger foods that pair so well with the wines!

Here’s one easy recipe for a delicious Spanish-themed snack that I love. These little omelet bites - which are almost like open-faced egg sliders - are easy to pick up and eat, which is key for a casual wine-tasting party. They combine creamy eggs, salty bacon, sharp arugula and garlic toast, and despite how easy they are to make, they will definitely wow your hungry partygoers. In all honestly, the only problem will be making enough to satisfy the demand!

Ingredients:

6 large free-range organic eggs

Splash of cream

Pinch of salt and pepper

Pinch of paprika

30 leaves of arugula

30 garlic toast slices

slices of bacon, cooked until crisp

White cheddar cheese, to shave (optional)

Directions:

In a large mixing bowl, combine the eggs, cream, salt, pepper and paprika and whisk until blended.

Next, scramble the egg mixture in a frying pan, over low to medium heat. Once cooked, set aside until they are cool enough to handle.

Place 2 small arugula leaves on the top of each garlic bread slice, then top with a spoonful of scrambled eggs. Garnish with a few crumblings of crispy bacon before serving. (If you are feeling generous, you can also accent each omelet bite with a few shavings of white cheddar cheese.)
