Spicy Bacon, Egg, and Cheese Dip

A dip isn’t the most common item you’ll see at the breakfast table. But if you’re feeding a crowd and want something different and more casual, whip up this quick Spicy Bacon, Egg, and Cheese Dip.It's perfect for a morning brunch that you're hosting, especially during tailgating season.


This delicious dip has everything people have come to expect from a hearty breakfast: bacon, butter, cheese and fried eggs. When scooped onto a crunchy chip, it's like a delicious breakfast platter all onto one tortilla chip. This dip is ideal for serving a crowd; everyone will be well fed, and guests can just help themselves to as much or as little as they want. 

Set out some crispy, sturdy tortilla chips for serving, and you’ve got a breakfast dish that will impress everyone. I highly recommend serving with a delicious homemade bloody mary for an all-around hearty breakfast that will keep you full and ready to go cheer on your favorite team!

 

 

Ingredients
  • 3 Tablespoons Unsalted Butter
  • 1/4 cup All Purpose Flour
  • 1 cup Milk (Plus more if you need)
  • 3 Cups Pepperjack Cheese, Shredded
  • Salt and Pepper
  • 3 Slices of Bacon, Cooked and Cut into pieces
  • 2 Eggs
  • Green Onions, Thinly Sliced, For Topping
  • Chips, For Serving
Directions

To make the cheese dip, melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the flour has soaked up all the butter and has slightly browned.

Add the milk and allow the milk to slightly thicken. Be sure to whisk the milk every so often so it doesn’t burn on the bottom. Remove the pan from the stove and whisk in the pepperjack cheese.

Continue stirring until the cheese has melted completely. Add salt and pepper to taste. Once finished, add the bacon pieces to the cheese dip. Transfer the cheese dip to a ceramic serving dish.

To cook the eggs, add a little bit of olive oil in a pan over medium-low heat. Once hot, crack 2 eggs into your pan. Cover the eggs and cook until the whites are set and the yolks are still runny. While cooking, add Salt and Pepper to the top of the eggs. Once finished, remove the eggs from the pan and place on top of the cheese dip. Sprinkle the top with thinly sliced scallions. Serve immediately with chips.

 

 

This dip is best enjoyed right after making.
