St. Patrick's Day Tipsy Cupcakes

The rich chocolate mixed with the sharpness of whiskey makes this a must have dessert recipe for any St. Patrick's Day party.


Who says that the cocktails have to have all the fun at a Saint Patrick's Day party?

I first tried this cake on a visit to Ireland a few years ago…it was so delicious that I make it every year and find myself sharing this recipe every time I serve it. 

Topped with Lucky You printable rounds, displaying them continues the theme of the party and by accenting with miniature Leprechaun hats and gold coins it makes the display fun and festive - matching our invitation and party theme.

Ingredients
  • 1/2 cup of Whiskey
  • 6 tablespoons of softened butter
  • 1/2 teaspoon Vanilla Extract
  • 2 large eggs
  • 1/4 cup of dark chocolate chips
  • 1 1/2 cups all-purpose white flour
  • 1/2 cup Unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/3  cups of white granulated sugar
  • 1 cup of Confection Sugar (for dusting)
  • 3 cups of Chocolate Frosting
Directions

Preheat your oven to 350F and lightly grease your cupcake trays. Set them aside.

Next, bring your Whiskey to a rolling boil in a small saucepan, and remove it from the heat before adding the dark chocolate chips to the liquid, stirring until you have a rich melted chocolate mixture. 

In a dry mixing bowl combine the flour, cocoa, baking powder, and salt, stirring until fully blended.  Then get to work on your wet bowl, mixing the sugar and butter at medium speed until well combined before adding the vanilla and eggs to the blend. Next, combine your dry bowl contents, and Whiskey chocolate blend to your sugar mixture bowl, beating at low speed just until fully combined.

Pour into your cupcake trays and bake at 350F for 12-15 minutes or until your baking pin comes out clean.  Once baked, allow them to cool, and then sprinkle with confection sugar before topping with your favorite chocolate frosting.
