Strawberry Cream Cheese Cupcakes Spiked with Licor 43

We packed some yummy incredients into these delicious cupcakes including  cream cheese frosting and delicious strawberries. But what stands out the most is the element of soaking the strawberries in a little dessert alcohol.

Birthdays are a big deal in our family. Is there really any other way to celebrate them? For my sister Claudia's birthday this month I decided to combine a few of her favorite things all in one delicious dessert: cupcakes, cream cheese frosting, and delicious strawberries. What I'm really excited about is the element of soaking the strawberries in this recipe in one of our favorite dessert drinks, Licor 43.

For this recipe, feel free to use a boxed cake mix - the homemade icing and the liqueur soaked strawberries are really what will make these cupcakes stand out!



For the cupcakes:

1 box yellow cake mix

1 1/2 cups finely chopped strawberries

3 oz Licor 43

For the icing:

7 ounces low fat cream cheese

1/2 cup fat free or low fat sour cream

1 teaspoon pure vanilla extract

1/4 cup honey

2 cups sliced strawberries


To make the cupcakes, about 1/2 hour before you pre-heat the oven to bake your cupcakes, chop strawberries and soak in Licor 43.

Prepare cake mix as you normally would, adding soaked strawberries at the end.


Bake until a toothpick inserted into the center of one comes out clean. Let cool completely before icing.


To make the frosting, blend the cream cheese ,sour cream, vanilla, and the honey until smooth. Spread over cooled cupcakes. Top with strawberries slices before serving.


About 12 cupcakes
