Strawberry Lemonade with Berry Ice Cubes

Ice is essential in a good summer drink. I mean, how else are you supposed to keep your beverage cold in the blistering heat? But instead of being boring and watering down your drink, ice can actually be a fun and creative cocktail addition.


Making your own ice cubes filled with herbs or fresh fruit could not be easier (seriously, all you do is freeze them in ice cubes). And not only do they add a touch of color to your cocktail, but add an extra touch of flavor if the ice melts (which isn't ideal, but in the hot summer months is totally possible!). 

This fresh strawberry lemonade from our friends at Driscoll's is made with only the simplest ingredients: lemon juice, strawberries, sugar and water. That's it. And the result is so delicious, you'll be serving it all summer long. Add in your favorite vodka or gin for a fun cocktail! 

Ingredients
  • 1 package (16 ounces) Driscoll's Strawberries, divided
  • 2 cups Driscoll's Berries (blackberries, blueberries and/or raspberries)
  • 1 cup sugar
  • 7 cups cold water, divided
  • 2 cups fresh lemon juice
Directions

Trim and core strawberries. Cut 3 strawberries into 1/2-inch cubes. Puree remaining strawberries in a food processor or blender. Strain puree through a fine-mesh sieve to remove seeds.

Place 1 to 3 berries in each cube in ice cube tray. Pour water over and freeze until solid.

Meanwhile, bring sugar and 1 cup water to a boil in a medium saucepan. Reduce to a simmer and cook until sugar is dissolved. Let cool.

Combine sugar syrup, remaining cold water, lemon juice, and strawberry puree in a large pitcher. Stir to combine. Add ice cubes and serve immediately.

Note: For picture perfect ice cubes, fill only halfway with water after adding berries and freeze until solid. Remove from freezer, add water to fill and freeze until solid. This will position the berry in the center of the ice cube (great for pictures but unnecessary for flavor).
