Sweet No-Bake Snowballs

Anyone who loves coconut will go nutty for these festive snowball treats! Luscious white chocolate pairs with the surprise flavor of your favorite coffee creamer, and is covered in a delicious coating of sweet, flakey coconut.  

Perfect for home, the office, or part of your next cookie exchange, these edible snowballs are the ultimate holiday treat.

  • 1 (12-ounce) package white chocolate chips
  • 1/4 cup + 2 tablespoons coffee creamer, any flavor (recipe tested with French Vanilla)
  • 6-ounce package slivered almonds, very finely ground
  • 1-1/2 cup sweetened flaked coconut

Place chocolate chips and cream in a medium bowl set over a pan of hot (not boiling) water; stir until melted and smooth. Stir in bourbon or cream and almonds. Spread in a lightly greased 8"x8" baking pan. Chill for about one hour, until firm. Cut into one-inch squares; roll each square into a ball, then roll in coconut. Keep chilled. Makes about 5 dozen.

Chill time: 1 hour

Serves: About 50-60
