Three-Bean Kale Salad Recipe

Eating beans on New Years Day is said to be lucky. Tradition states that eating beans will bring you prosperity. So what could be better than making and enjoying this 3 Bean Salad on New Years Day?

Not only are beans inexpensive, but this dish couldn’t be easier to make. No cooking involved and this salad literally comes together in minutes. This dish can be easily assembled in advance and saver lots of hand-on time right before serving, making it the ultimate dish to make for your party.



  • 1 can kidney Beans, drained and washed
  • 1 can black Beans, drained and washed
  • 1 can Great Northern White Beans, drained and washed
  • 1 stalk of celery, sliced
  • 1/4 red onion, thinly sliced
  • Handful of cilantro, chopped
  • 2 stalks of kale, chopped
  • For the Dressing
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Place the kidney beans, black beans, and great northern beans in a large bowl. Add the sliced celery, sliced red onion, cilantro, and kale to the bowl. Lightly toss to combine. Set aside.

In a small glass jar, place all the ingredients for the dressing – olive oil, red wine vinegar, salt, and pepper. Place the cap on the glass jar and shake vigorously to combine.

Pour the dressing onto the salad ingredients in the large bowl. Gently toss to combine. If needed, add more salt and/or pepper. Serve immediately, or place in the refrigerator (covered) until ready to serve.

This bean salad lasts up to 5 days in a sealed container in the refrigerator.
