Warm and Crunchy Caramelized Peaches with Ice Cream Recipe

Sautéing and caramelizing fruit is a process I’ve seen before, especially with bananas and apples, and normally the fruit cooks down and gets very soft. But I’ve created this peach dessert so that the fruit actually gets super crispy after it has been caramelized in the pan. The process is simple, but it works!
What you do is sauté the peaches in a little bit of olive oil. After the fruit has cooked down and released its juices, you turn the heat up to medium-high and allow the peaches to get nice and crispy. Next, you reduce the heat and add brown sugar and butter to create a thin caramel coating on the peaches. Finally, you top the caramelized peaches with a big scoop of vanilla ice cream. Allowing the cold ice cream to mix with the warm peaches will create an even crispier texture!
2 fresh peaches, cut into chunks
1 tablespoon olive oil
1/4 cup brown sugar
3 tablespoons unsalted
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
Vanilla ice cream, for topping
Caramel sauce, for topping
Place the peaches, along with a tablespoon of olive oil, in a medium sauté pan over medium heat. Allow the peaches to cook down and release there own juices.
Once the peaches are soft, increase the heat to medium-high and cook for 5 minutes to create a crispy texture on the peaches. Reduce the heat to medium and add the brown sugar, butter, vanilla, cinnamon, and salt. Let the peaches soak up the brown sugar and butter and cook until a thin caramel is created, about 10 minutes.
Remove the pan from the heat and place the peaches in individual serving dishes. Top each serving with a scoop of vanilla ice cream and a drizzle of caramel sauce. Enjoy immediately!
