Watermelon Rice Krispies Treats

These creative treats make an exciting addition to any summer or Labor Day get-together and (bonus!) they pack up well if you have a long way to travel!


Surprise guests by serving a platter of these “watermelon slices” that are crispy, crunchy, and add the perfect amount of fun. The best part? The kids will enjoy helping you create these sweet treats (and they’ll get a kick out of fooling everyone!) so you can add a little bit of sweetness to the time you spend together!

Ingredients
  • 8 cups crispy rice cereal
  • 8 cups marshmallows
  • 6 tablespoons butter
  • Green food coloring
  • Red food coloring
  • Chocolate-covered sunflower seeds, mini chocolate chips, or raisins (for the “seeds”)
Directions

Start by preparing two 8-inch cake pans by greasing with butter or non-stick spray.

For the green “rind,” add 4 cups of cereal into large bowl and set aside. Melt 4 cups marshmallows and 3 tablespoons butter in a microwave-safe bowl for two minutes, or on the stovetop until puffy. Remove from microwave or stove and stir in a drop at a time of green food coloring until desired color. Pour green marshmallow mixture over the bowl of cereal. Quickly stir together using a buttered spatula.

While still warm, divide green mixture between the two prepared cake pans, pressing along the sides of the pans to create a ring about 1.5-inches tall and 1-inch thick.

For the red “watermelon,” repeat step 2 above, using red food coloring instead of green. Press the red mixture into the center of the two cake pans (inside of the green “rinds”) with a buttered spatula.

Add "seeds” to top. Allow time to cool and then cut into slices.

Voila! You're ready to impress guests with the classic flavor of rice krispie treats in the shape of their favorite summer fruit!
