Healthy Onion Dip Recipe

After a holiday season full of cookies, cupcakes and other delicious desserts though, we're looking to keep that New Year's resolution to eat healthy - and let's face it, at around 1,000 calories a cup, typical onion dip will not do the trick.


That's why we've whipped up this tasty, yet healthy onion dip recipe. Indulge in great flavor and texture without feeling guilty about the calorie count (it's around 240 compared!) using this recipe we've whipped up.

Ingredients:

1/2 cup plain non-fat Greek yogurt

2 small onions, caramelized*

1 tablespoon extra virgin olive oil

1 tablespoon chives, chopped

1/2 teaspoon grated garlic

salt and pepper to taste

How to Caramelize Onions:

Caramelize your onions by melting a tablespoon of margarine with a tablespoon of olive oil in a saute pan on medium-high heat. Once melted and hot, add in sliced onions. Coat completely with olive oil and margarine mixture, stirring constantly to pick up any brown flavoring that appears.

Once coated, reduce heat to medium-low and spread onions out evenly along the bottom of your pan. Allow to cook for 10 minutes, stirring occasionally.

Add a 1/2 teaspoon of salt to the onions and stir, then allow to cook for another 5 minutes. If you'd like, add in a 1/2 teaspoon of sugar and allow to cook for another 5 minutes.

Reduce the flame to low and allow your onions to sit in the pan for another 20 - 30 minutes. This is when the caramelization will happen - be sure to stir occasionally to pick up the brown bits that start to form. You can also add a bit of water (or stock) every once in a while to keep the onions moist.

Directions:

Add your caramelized onions to a bowl with 1/2 cup yogurt.

Mix in your olive oil, chives, crushed garlic and salt and pepper to taste.

Serve alongside pretzels for a tasty, healthier treat!
