Late Night Snack Cookies

Make these yummy chocolate chip cookies for dessert this weekend, for no other reason than just because they are jam-packed with with all that is wonderful in this world: chewy chocolatey caramels, salty potato chips, and decadent dark chocolate. With these cookies on hand, you’ll want to raid the pantry late at night.
2 1/2 cups all purpose flour
1 cup brown sugar
1 cup white sugar
2/3 cup butter, softened
2/3 cup semi-sweet chocolate chips
1 tsp baking soda
1 tsp vanilla
18 round chewy caramels in milk chocolate unwrapped and coarsely chopped
4 cups potato chips, coarsely crushed (about 2 cups crushed)
1/2 tsp coarse sea salt, for sprinkling
Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
In medium bowl, stir flour, sugar, butter, egg, vanilla, and baking soda until soft dough forms. Add caramels, potato chips and chocolate chips; stir until well-mixed (dough will be thick).
Onto parchment-lined cookie sheets, drop dough by heaping tablespoonfuls about 2 inches apart.
Bake 10 to 12 minutes or until edges are light golden brown. Upon removing, sprinkle lightly with sea salt.
Cool 5 minutes; remove from cookie sheets to cooling racks to cool completely. Store covered at room temperature.
