Skinny Two-Ingredient Lemon Cupcakes

It’s been said that "love and cupcakes make the world go round." OK, maybe we just made that up. But as much as we love our cupcakes, we can assure you that no one has ever claimed cupcakes are low-calorie. Or have they?


We recently did some online digging and found a recipe that's an oldie, but a goodie. We made it more modern by using gluten-free cake mix, but you won't believe the secret ingredient that's in them that makes them so low in calories.  

 

 

(Drumroll please....)

Diet 7 Up! Just one can of Diet 7 Up made all of these cupcakes. And not only were they easy to whip up, but they are so delicious too. We topped with some lemon frosting for a sweet and zesty treat you won't feel guilty about indulging in. Check out the recipe below, and make these for your next party dessert or brunch. 

 

Ingredients
  • 1 can (12 ounces) diet citrus soda (7 Up or Sprite)
  • 1 package vanilla cake mix
  • 1 12-ounce container lemon frosting
  •  

Directions

Preheat an oven to 350 F, or what it says on cake mix box. In a large mixing bowl, pour entire package of cake mix. Slowly whisk in can of soda, stirring slowly as you pour. (It will fizz a bit but that is OK) Pour mix into lined and greased muffin tins.

 

 

Bake for 15 – 20 minutes, checking about half way through, and then again around 18 minutes to check the progress. Remove and let cool once the tops look firm.

 

 

After they are fully cooled, spread lemon frosting over each.

 

 

Makes: 12 cupcakes, each with less than 100 calories!
