Skinny Shamrock Milkshake: Low-Fat St. Patrick's Day Treat

There are many things to love about March – it’s the start of spring, and Daylight Savings gives us all an extra hour of sunlight! We also love that it’s the month of St. Patrick’s Day and the limited time when you can grab McDonald’s famous green Shamrock Shake.


In honor of this wonderful creamy and minty concoction, we decided to whip up our own skinny version! The fast food milkshake is quite delicious, but it packs some serious calories -- 680 for a 16 ounce serving, and more than 80 grams of sugar! That's certainly not diet-friendly (or favorable for upcoming sundress and swimsuit season!)

 

 

To lighten ours up, we used Greek yogurt (frozen overnight) in place of ice cream in the recipe, and a little vanilla almond milk and honey for sweetness. 

You can add some green food coloring to get the famous green color, and top with light whipped cream if you'd like. Have fun decorating your skinny drink with some colorful sprinkles, or edible glitter. 

 

 

And if you're really feeling adventurous, spike it with some rum or creme de menthe. It might take some of the "skinny" away, but it will certainly add some fun. 

 

Ingredients
  • 2 cups Greek yogurt, frozen overnight
  • 1/2 cup vanilla almond milk
  • 2 Tbs Honey (or more, to taste)
  • 4 to 6 drops mint oil or mint extract
  • 2 to 3 drops green food coloring
  • Whipped cream, for topping
  • Sprinkles, for topping
Directions

Allow Greek Yogurt to soften for about 10 minutes so it will be easy to blend. Combine yogurt, almond milk, mint oil, and food coloring in a blender and puree for about 30 seconds. Spike if desired. Serve immediately, topped with whipped cream and sprinkles.

Makes: 2 milkshakes
