Skinny Watermelon Tequila Cooler

We think nothing says ‘summer’ like cool refreshing watermelon. But on the other hand, Tequila does a pretty good job of getting us into the summer spirit, too! Combine these two amazing ingredients for an amazing blended cocktail to serve up at your next summer soiree

 It’s cold, it’s refreshing, sweet, and spiked with Tequila. Another bonus? It has no added sugar - making it 'skinny!' Excuse us while we go blend up another!

Blended Watermelon Tequila Cooler

Today we’re using the smooth and versatile tequila called Casamigos.   George Clooney, along with some longtime friends all first bonded over their love of good tequila. They claim that Tequila-filled nights with friends is how Casamigos was born. Their idea was to make the best-tasting, smoothest tequila whose taste doesn’t have to be covered up with loads of salt or sugar. We think this simple recipe that is just frozen watermelon and tequila is just perfection. 

  • 1 seedless watermelon (about 5-6 lbs)
  • 3/4 cup lemon juice
  • 2 cups blanco tequila

Cut watermelon into chunks and discard rind. Purée chunks in batches in a food processor. (We used a Nutribullet.) Pour mixture through a strainer into a bowl. Pour 4 cups into another bowl; whisk in lemon juice. Save any remaining watermelon juice for another use. Pour juice mixture into 4 ice cube trays (standard trays have 14 slots) and freeze until firm, at least 3 hours or overnight.

To make the drinks: Blend half the watermelon cubes in a food processor until broken up, then add 1 cup tequila and whirl until blended. Pour into a pitcher and repeat with remaining ingredients.

Makes: 8 Cocktails
