Baby Red Potato Halves with Chive Cream

Ingredients
9 Baby Red Potatoes
1 (8 oz.) container sour cream
1 bunch fresh chives, snipped into 1/4-inch lengths
Steps
Add potatoes to a pot and cover in water. Bring water to a boil over medium-high heat and cook until potatoes are tender, about 15 minutes. Drain potatoes in a colander and cool.
Cut potatoes in half width-wise. Turn potatoes cut side down and use a paring knife to make a small well in the top of each potato. Add a drop of sour cream into the well and serve cool.
Makes 18 hors d'oeuvres or about 6 servings.
