Cognac Sponge Cupcakes

Indulge Dad on Father's Day with these saucy cupcakes.

Ingredients
  • 4 eggs, separated

  • 1 Cup sugar

  • 2 tablespoons butter, melted

  • 2 tablespoons Cognac

  • 1 Cup cake flour

  • 1 Teaspoon baking powder

  • 1/8 Teaspoon salt

Steps
  • Center a rack in the oven and preheat oven to 350F degrees. Line a cupcake tin with paper baking cups.

  • Beat egg yolks and 1/2 cup granulated sugar in a medium bowl until pale yellow. Add melted butter and Cognac and beat until blended. In another large bowl using clean beaters, beat egg whites on high speed until soft peaks form. Gradually add remaining 1/2 cup granulated sugar and beat until stiff peaks form. Fold yolk mixture into egg whites. Sift together dry ingredients and gently fold into mixture.

  • Pour mixture into paper-lined baking cups in cupcake tin and lightly shake pan to level batter. Bake for 10-12 minutes or until center springs back to the touch. Cool cupcakes to room temperature.

  • Ice cupcakes with Chocolate Ganache frosting and top with a Hershey's kiss to give Dad a sweet smooch on Father's day.

    Makes about 12 cupcakes
