A batch of whipped, warm sweet potatoes laced with molasses is an ideal complement to a savory Thanksgiving stuffing.
Ingredients
6 lbs. yams or sweet potatoes, washed, peeled, cut into 1-inch chunks
3 tablespoons molasses
3/4 cup heavy cream
1 teaspoon ground ginger
Steps
Place yams in a large stockpot and cover with water. Bring to a boil over medium-high heat and cook until tender, about 15 minutes. Drain yams of water and transfer to a large bowl or place back in stockpot.
Mash yams until smooth. Add molasses, cream, and ginger, and whip until blended and fluffy.
Spoon into serving dish and serve warm. Makes 12 servings
