Molasses Sweet Potato Whip

A batch of whipped, warm sweet potatoes laced with molasses is an ideal complement to a savory Thanksgiving stuffing. 

Ingredients
  • 6 lbs. yams or sweet potatoes, washed, peeled, cut into 1-inch chunks

  • 3 tablespoons molasses

  • 3/4 cup heavy cream

  • 1 teaspoon ground ginger

Steps
  • Place yams in a large stockpot and cover with water. Bring to a boil over medium-high heat and cook until tender, about 15 minutes. Drain yams of water and transfer to a large bowl or place back in stockpot.

  • Mash yams until smooth. Add molasses, cream, and ginger, and whip until blended and fluffy.

  • Spoon into serving dish and serve warm.

    Makes 12 servings
