Apple Cranberry Coleslaw with Cashews

Casual parties around lunch time demand the presence of certain menu options - especially if the celebration is taking place outside in warmer weather.

We can't remember the last time we went to a picnic or backyard fete and didn't see bowls of egg salad and coleslaw on the bar.

For my recent little graduate I decided to give these deli salads a bit of a healthier, tastier revamp.

Be prepared - this coleslaw will get gobbled up quick!

Ingredients:

1 small head of cabbage sliced in thin lengths

1 apple, cut and sliced in small pieces

1/4 cup dried cranberries

2 green onions--tops only;  diced

3/4 cup of toasted cashew nuts-coarsely chopped

1/2 cup half and half

1/2 cup mayonnaise

1/4 cup apple cider vinegar

1/4 cup sugar

freshly ground pepper

Directions:

Combine the cabbage, apple pieces, green onions and dried cranberries in a large bowl.

In a small bowl, whisk the cream, mayonnaise, sugar, and cider vinegar together and then stir into the cabbage mixture.

Season with freshly ground black pepper. Add the toasted cashews and toss.

We filled small containers with individual servings of the coleslaw and popped them in the sack lunch.
